Ingredients

  • 2 cups grated zucchini
  • 1 cup chopped walnuts
  • 1 cup sugar
  • ½ cup vegetable oil
  • 2 eggs beaten
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the sugar, eggs, and vanilla. Stir in the grated zucchini and then the vegetable oil.
  3. In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. Stir this into the zucchini mixture. Mix in the chopped walnuts.
  4. Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool in the pan on a rack for 20 minutes. Remove from pan, and completely cool before slicing.
