  • 1 cup grated zucchini
  • 1 cup chopped plums
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup vegetable oil
  • 1 cup sugar
  • 2 eggs beaten
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, combine oil, sugar, eggs, and vanilla. Stir in grated zucchini and chopped plums.
  4. Gradually add the dry ingredients to the wet mixture. Mix until just combined.
  5. Pour batter into the prepared loaf pan.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
