Main Ingredients
- 1.5 cups All-purpose flour
- 1 teaspoon Baking powder
- 0.5 teaspoon Baking soda
- 0.5 teaspoon Salt
- 1 cup Shredded zucchini
- 0.5 cup Shredded coconut
- 0.5 cup Vegetable oil
- 0.75 cup Sugar
- 2 Eggs
- 1 teaspoon Vanilla extract
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In another bowl, mix zucchini, coconut, oil, sugar, eggs, and vanilla.
Combine wet and dry ingredients until just mixed.
Pour batter into loaf pan and bake for 60 minutes or until a toothpick comes out clean.
Let cool before slicing. Enjoy!
