Zucchini Bread

Main Ingredients
- 2 cups Grated Zucchini
- 1 cup Sugar
- 2 cups All-purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 1 teaspoon Ground Cinnamon
- ½ teaspoon Ground Nutmeg
- ½ cup Vegetable Oil
- 2 Large Eggs
- 2 teaspoon Vanilla Extract
Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a large bowl, mix together the sugar, eggs, and vanilla extract. Add the grated zucchini and vegetable oil, and stir until well combined.
In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the zucchini mixture, stirring until just combined.
Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
