Vegan Pumpkin Spice Bread

Main Ingredients
- 1 cup Pumpkin puree
- ½ cup Coconut oil, melted
- 1 cup Brown sugar
- ¼ cup Almond milk
- 1 teaspoon Vanilla extract
- 1 ¾ cup All-purpose flour
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 2 teaspoon Pumpkin pie spice
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, whisk together the pumpkin puree, melted coconut oil, brown sugar, almond milk, and vanilla extract.
In another bowl, combine the flour, baking soda, salt, and pumpkin pie spice.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
