Main Ingredients
- 1 cup Pumpkin Puree
- ½ cup Vegetable Oil
- 1 cup Sugar
- 2 tablespoon Ground Flaxseed mixed with 6 tablespoon water
- 1 teaspoon Vanilla Extract
- 1 ¾ cup All-Purpose Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- ½ teaspoon Ground Cinnamon
- ½ teaspoon Ground Nutmeg
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, whisk together the pumpkin puree, vegetable oil, sugar, flaxseed mixture, and vanilla extract.
In another bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
