Sweet Potato Rolls Recipe

Main Ingredients
- 1 cup mashed sweet potatoes cooked and mashed
 - 2 cups all-purpose flour
 - 1 packet active dry yeast about 2 ¼ teaspoons
 - ¼ cup warm water 110°F
 - ¼ cup sugar
 - ¼ cup butter melted
 - 1 teaspoon salt
 
 
In a small bowl, dissolve yeast in warm water. Let it stand until creamy, about 10 minutes.
In a large bowl, combine the yeast mixture, sweet potatoes, sugar, butter, and salt. Stir in flour, a little at a time, to form a soft dough.
Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down. Turn onto a lightly floured surface; divide into 12 pieces. Shape each into a roll. Place 2 inches apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes.
Bake at 375°F for 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.
