  • 1 cup mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ cup butter cold, cut into pieces
  • ½ cup milk

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine flour, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Add the mashed sweet potatoes and milk, stirring just until combined.
  5. Turn the dough out onto a floured surface and knead gently 2-3 times.
  6. Roll out the dough to about ½ inch thickness and cut with a biscuit cutter.
  7. Place biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
