  • 1 cup mashed sweet potatoes
  • ½ cup coconut milk
  • ½ cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup shredded coconut
  • ¼ cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine mashed sweet potatoes, coconut milk, sugar, vegetable oil, eggs, and vanilla extract. Mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in shredded coconut.
  4. Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
