  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • ¼ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Milk
  • 2 Eggs beaten
  • ¼ cup Vegetable oil

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a cast iron skillet or baking dish.
  2. In a mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, beaten eggs, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared skillet or baking dish.
  6. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Let cool slightly before slicing and serving.
