Saskatoon Cranberry Loaf

Main Ingredients
- 1.5 cups All-purpose flour
- 1 cup Sugar
- 1 teaspoon Baking powder
- 0.5 teaspoon Baking soda
- 0.5 teaspoon Salt
- 1 cup Saskatoon berries fresh or frozen
- 1 cup Cranberries fresh or frozen
- 1 cup Buttermilk
- 1 large Egg
- 0.25 cup Vegetable oil
- 1 teaspoon Vanilla extract
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix the buttermilk, egg, vegetable oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the Saskatoon berries and cranberries.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
