Main Ingredients
- 2 cups chopped rhubarb
- 1 cup sugar
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 2 pcs eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the chopped rhubarb and sugar. Let it sit for a few minutes.
Add the vegetable oil, vanilla extract, and eggs to the rhubarb mixture. Mix well.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into a greased loaf pan.
Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
