Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ cup Unsalted butter, melted
  • ¾ cup Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • ½ cup Greek yogurt
  • 3 medium Ripe bananas, mashed
  • 1 cup Fresh raspberries

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, mix the melted butter and brown sugar until well combined. Add the eggs and vanilla extract, and mix until smooth.
  4. Stir in the Greek yogurt and mashed bananas until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the fresh raspberries.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
