  • 1 cup Pumpkin Puree
  • 1 cup Cornmeal
  • 1 cup All-purpose Flour
  • ½ cup Sugar
  • 1 tablespoon Baking Powder
  • ½ teaspoon Salt
  • 1 cup Milk
  • 2 Eggs
  • ¼ cup Vegetable Oil

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease a baking pan.
  2. In a mixing bowl, whisk together the pumpkin puree, milk, eggs, and vegetable oil.
  3. In another bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let it cool slightly before serving. Enjoy!
