- 1 cup Pumpkin Puree
- 1 cup Cornmeal
- 1 cup All-purpose Flour
- ½ cup Sugar
- 1 teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- 1 cup Milk
- 2 Eggs
- ¼ cup Vegetable Oil
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk together the pumpkin puree, milk, eggs, and vegetable oil.
In another bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Pour the batter into a greased baking pan.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let cool before serving.
