- 1.5 cups All-purpose flour
- 1 cup Sugar
- 1 teaspoon Baking soda
- 0.5 teaspoon Salt
- 1 teaspoon Ground cinnamon
- 0.5 teaspoon Ground nutmeg
- 1 cup Pumpkin puree
- 0.5 cup Vegetable oil
- 2 large Eggs
- 0.5 cup Raisins
- 0.5 cup Chopped pecans
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
In another bowl, mix together the pumpkin puree, vegetable oil, and eggs until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Fold in the raisins and chopped pecans.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
