In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
Add flour and salt to the yeast mixture. Mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large pot, bring 8 cups of water and baking soda to a boil.
Divide the dough into 8 pieces and shape each piece into a ball. Boil each ball in the baking soda water for 30 seconds on each side.
Place the boiled dough balls on the prepared baking sheet. Brush with beaten egg and sprinkle with coarse salt.
Bake for 15-20 minutes or until the pretzel bread is deep golden brown.
Let cool slightly before serving.
