- 1 cup Mashed Potatoes
- 2 cups All-purpose Flour
- 1 packet Active Dry Yeast
- ½ cup Warm Water
- ¼ cup Sugar
- ¼ cup Butter, melted
- 1 teaspoon Salt
1. In a mixing bowl, dissolve yeast in warm water.
2. Add sugar, butter, mashed potatoes, salt, and 1 cup of flour. Beat until smooth.
3. Stir in remaining flour to form a soft dough.
4. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
5. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
6. Punch dough down. Turn onto a lightly floured surface; divide into 8 pieces. Shape each piece into a roll. Place on a greased baking sheet. Cover and let rise until doubled, about 30 minutes.
7. Bake at 375°F (190°C) for 15-20 minutes or until golden brown. Remove from pans to wire racks to cool.
