- 1 cup Cornmeal
- 1 cup All-purpose flour
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- 1 cup Buttermilk
- 1 large Egg
- 1 cup Shredded pepper jack cheese
- ¼ cup Melted butter
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the cornmeal, flour, baking powder, and salt.
In another bowl, whisk together the buttermilk and egg.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in the shredded pepper jack cheese and melted butter.
Drop spoonfuls of the batter onto a greased baking sheet.
Bake for 15-20 minutes, or until golden brown.
Let cool slightly before serving.
