1. In a large mixing bowl, combine the oats and boiling water. Let it sit for about 10 minutes until the oats are softened.
2. Stir in the yeast, honey, melted butter, and salt. Mix well.
3. Gradually add the flour, one cup at a time, until a dough forms.
4. Knead the dough on a floured surface for about 10 minutes, until smooth and elastic.
5. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
6. Punch down the dough and shape it into a loaf. Place it in a greased loaf pan.
7. Cover and let it rise again for about 30 minutes.
8. Preheat the oven to 375°F (190°C). Bake the bread for 35-40 minutes, or until golden brown and sounds hollow when tapped.
9. Remove from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
