1. In a large bowl, combine the mashed potatoes, flour, and salt. Mix until a dough forms.
2. Divide the dough into 8 equal parts. Roll each part into a ball.
3. On a floured surface, roll each ball into a thin circle.
4. Heat a griddle or large skillet over medium heat. Cook each flatbread for 2-3 minutes on each side, until golden brown spots appear.
