Ingredients

  • 3 cups All-purpose flour
  • 1 cup Raisins
  • 1 tablespoon Cinnamon
  • 1 teaspoon Salt
  • ½ teaspoon Yeast
  • 1 ½ cups Water Room temperature

Instructions 

  1. 1. In a large mixing bowl, combine flour, raisins, cinnamon, salt, and yeast.
  2. 2. Add water and stir until a shaggy dough forms.
  3. 3. Cover the bowl with plastic wrap and let it sit at room temperature for 12-18 hours.
  4. 4. Preheat your oven to 450°F (230°C). Place a Dutch oven or heavy pot with a lid in the oven to preheat.
  5. 5. Turn the dough out onto a floured surface and shape it into a ball.
  6. 6. Carefully remove the preheated pot from the oven and place the dough inside. Cover with the lid and bake for 30 minutes.
  7. 7. Remove the lid and bake for an additional 15 minutes, or until the bread is golden brown.
  8. 8. Let the bread cool on a wire rack before slicing.
