Main Ingredients
- 1 cup Cornmeal
- 1 cup All-purpose flour
- 1 cup Buttermilk
- ½ cup Sugar
- ¼ cup Butter, melted
- 2 Eggs beaten
- 1 cup Corn kernels fresh or frozen
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- 1 cup Cheddar cheese, shredded
- 1 can Green chilies, diced
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix the buttermilk, melted butter, and beaten eggs.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the corn kernels, cheddar cheese, and diced green chilies.
Pour the batter into a greased baking pan.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let it cool slightly before serving. Enjoy!
