Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • ½ cup Cold butter, cubed
  • ½ cup Grated Parmesan cheese
  • 1 tablespoon Fresh dill, chopped
  • 1 tablespoon Lemon zest
  • cup Buttermilk
  • 1 Egg, beaten for egg wash

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the Parmesan cheese, chopped dill, and lemon zest.
  5. Pour in the buttermilk and mix until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and knead gently a few times until it comes together. Pat the dough into a circle about 1 inch thick.
  7. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  8. Brush the tops of the scones with the beaten egg.
  9. Bake for 18-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
  10. Let the scones cool on a wire rack before serving.
