Ingredients

  • 4 cups russet potatoes, peeled and cubed
  • ¼ cup butter melted
  • ¼ cup heavy cream
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 ½ cups all-purpose flour plus extra for rolling

Instructions 

  1. 1. Boil the potatoes until tender, then drain and rice them.
  2. 2. Mix the riced potatoes with butter, cream, sugar, and salt. Cool to room temperature.
  3. 3. Gradually add flour to the potato mixture until a dough forms.
  4. 4. Divide the dough into small balls and roll out thinly on a floured surface.
  5. 5. Cook on a hot griddle until brown spots appear, then flip and cook the other side.
  6. 6. Cool on a wire rack and serve warm or store for later use.
