1. In a large mixing bowl, combine warm water and honey. Sprinkle yeast over the top and let it sit for 5 minutes until foamy.
2. Add melted butter, salt, whole wheat flour, and 2 cups of all-purpose flour. Mix until a dough forms.
3. Gradually add the remaining all-purpose flour, ½ cup at a time, until the dough is no longer sticky.
4. Knead the dough on a floured surface for about 8-10 minutes, until smooth and elastic.
5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
6. Punch down the dough and divide it into rolls or shape into loaves. Place on a greased baking sheet.
7. Cover and let rise for another 30 minutes. Preheat oven to 375°F (190°C).
8. Bake for 20-25 minutes, or until golden brown. Cool on a wire rack.
