- 2 cups All-purpose flour
- 1 teaspoon Baking soda
- 0.5 teaspoon Salt
- 0.5 cup Unsalted butter, melted
- 1 cup Sugar
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 1.5 cups Mashed ripe bananas
- 1 cup Shredded coconut
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, and salt.
In another bowl, mix the melted butter and sugar until well combined. Add the eggs and vanilla extract, and mix well.
Stir in the mashed bananas and shredded coconut.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
