Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 ripe bananas, mashed
  • ½ cup vegetable oil
  • 2 eggs beaten
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • ½ cup chopped nuts

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, sugar, baking soda, and salt.
  3. In another bowl, mix together mashed bananas, oil, eggs, and vanilla extract.
  4. Stir banana mixture into flour mixture until just combined. Fold in crushed pineapple and chopped nuts.
  5. Pour batter into prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let bread cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
