Ingredients

  • 1 cup Pumpkin puree
  • ½ cup Vegetable oil
  • 2 Eggs
  • 1 cup Sugar
  • 1 ½ cups Gluten-free flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ teaspoon Ground cinnamon
  • ½ teaspoon Ground nutmeg

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the pumpkin puree, vegetable oil, eggs, and sugar until smooth.
  3. In another bowl, combine the gluten-free flour, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
