Ingredients

  • 1 cup Cornmeal
  • 1 cup Gluten-Free All-Purpose Flour
  • ¼ cup Sugar
  • 1 tablespoon Baking Powder
  • ½ teaspoon Salt
  • 1 cup Milk
  • ¼ cup Vegetable Oil
  • 1 Egg beaten

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a large mixing bowl, whisk together the cornmeal, gluten-free flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, vegetable oil, and beaten egg.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
