- 2 cups All-purpose flour
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 1 teaspoon Ground ginger
- ½ cup Unsalted butter, softened
- 1 cup Granulated sugar
- 2 Large eggs
- 4 Ripe bananas, mashed
- 1 teaspoon Vanilla extract
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a mixing bowl, whisk together the flour, baking soda, salt, and ground ginger.
In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
Stir in the mashed bananas and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
