Ingredients 

Main Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Grated zucchini
  • 0.5 cup Ground flax seeds
  • 0.5 cup Sugar
  • 0.5 cup Vegetable oil
  • 2 units Eggs
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine the flour, ground flax seeds, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs and mix in the sugar, oil, and vanilla extract.
  4. Add the grated zucchini to the wet ingredients and mix well.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
