1. In a large mixing bowl, dissolve yeast in warm water. Add sugar, butter, salt, egg, and 2 cups of flour. Beat until smooth. Stir in enough remaining flour to form a soft dough.
2. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
3. Punch dough down. Turn onto a lightly floured surface; divide into two portions, one slightly larger than the other. Shape the larger portion into an oval for the bunny's body; place on a greased baking sheet.
4. Divide the smaller portion into two balls, one slightly larger than the other. Shape the larger ball into a round for the head and the smaller ball into a round for the tail. Attach to the body. Add ears, eyes, and nose using dough scraps.
5. Cover and let rise until doubled, about 30 minutes. Bake at 350°F for 25-30 minutes or until golden brown. Cool on a wire rack.
