  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • ½ cup sugar
  • ½ cup coconut oil, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat the eggs, then add the sugar, melted coconut oil, and vanilla extract. Mix well.
  4. Combine the wet and dry ingredients, then fold in the grated zucchini.
  5. Pour the batter into the prepared loaf pan and bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
