In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, beat together sugar, eggs, oil, and vanilla extract.
Stir in grated cucumber and nuts.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Pour batter into the prepared loaf pan.
Bake for 1 hour or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
