Instructions
Dissolve yeast and sugar in warm water. Let it sit for 5 minutes.
In a large bowl, combine flour, mashed potatoes, and salt.
Add yeast mixture to the flour mixture. Mix until a dough forms.
Knead the dough for about 10 minutes until smooth and elastic.
Place dough in a greased bowl, cover, and let rise for 1 hour.
Preheat oven to 375°F (190°C).
Punch down the dough and shape into a loaf. Place in a greased loaf pan.
Bake for 45 minutes or until golden brown.
Let cool before slicing.
