Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup orange juice
  • ¼ cup vegetable oil
  • 1 egg
  • 1 cup chopped mango
  • 1 cup cranberries

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine orange juice, oil, and egg. Add to flour mixture, stirring until just moistened.
  4. Fold in mango and cranberries.
  5. Pour batter into prepared loaf pan.
  6. Bake for 50 minutes or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes, then remove to a wire rack to cool completely.
