Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 ripe bananas, mashed
  • ¼ cup unsalted butter, melted
  • 1 egg, beaten
  • 1 cup dried cranberries

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large mixing bowl, combine the oats, flour, sugar, baking soda, and salt.
  3. In another bowl, mix the mashed bananas, melted butter, and beaten egg.
  4. Combine the wet and dry ingredients until just mixed. Fold in the dried cranberries.
  5. Pour the batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
