  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 cup Buttermilk
  • 1 Egg
  • 2 tablespoon Butter, melted
  • ½ cup Cracklings

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the cornmeal, flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the cracklings.
  5. Pour the batter into a greased skillet and bake for 25-30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  6. Let cool slightly before serving.
