  • 1 cup Pumpkin Puree
  • ½ cup Coconut Oil melted
  • 2 Eggs large
  • 1 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • ½ cup Chopped Nuts walnuts or pecans

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine pumpkin puree, melted coconut oil, eggs, sugar, and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  4. Fold in the chopped nuts. Pour the batter into the prepared loaf pan.
  5. Bake for 60 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing.
