Ingredients

  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 1 cup Shredded coconut
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Coconut milk
  • 0.5 cup Vegetable oil
  • 2 Eggs beaten
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the flour, sugar, shredded coconut, baking powder, and salt.
  3. In another bowl, mix the coconut milk, vegetable oil, beaten eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
