- 1.5 cups All-purpose flour
- 1 cup Shredded coconut
- 0.5 cup Almond flour
- 1 cup Sugar
- 1 teaspoon Baking powder
- 0.5 teaspoon Salt
- 2 Eggs
- 0.5 cup Coconut oil, melted
- 1 teaspoon Vanilla extract
- 0.5 cup Milk
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, whisk together the flour, shredded coconut, almond flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and then add the melted coconut oil, vanilla extract, and milk. Mix well.
Combine the wet ingredients with the dry ingredients and stir until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
