Ingredients 

Main Ingredients

  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup dried cranberries
  • 1 orange (zest and juice)

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, beat together the eggs, oil, vanilla, and sugar.
  3. Fold in the zucchini and then add the flour, salt, baking powder, baking soda, cinnamon, and nutmeg. Do not overmix.
  4. Stir in the cranberries, orange zest, and orange juice.
  5. Pour batter into prepared loaf pan.
  6. Bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in pan for 20 minutes, then remove from pan and cool completely on a wire rack.
