  • 3 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • ½ cup vegetable oil
  • 2 eggs beaten
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, combine flour, sugar, cinnamon, salt, baking powder, and baking soda.
  3. In another bowl, mix grated zucchini, vegetable oil, beaten eggs, and vanilla extract.
  4. Combine wet and dry ingredients until just blended. Pour into the prepared loaf pan.
  5. Bake for 40 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
