- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- ¼ cup melted butter
- 1 cup shredded cheddar cheese
- ½ cup cooked and crumbled bacon
- 2 jalapenos, diced
- ¼ cup honey
Preheat oven to 400°F (200°C).
In a large bowl, mix cornmeal, flour, baking powder, baking soda, and salt.
In another bowl, whisk buttermilk, eggs, and melted butter.
Combine wet and dry ingredients, then fold in cheese, bacon, and jalapenos.
Pour batter into a greased skillet.
Drizzle honey on top.
Bake for 20-25 minutes or until golden brown.
