- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup cantaloupe, pureed
- ½ cup vegetable oil
- 2 eggs beaten
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix together pureed cantaloupe, vegetable oil, beaten eggs, and vanilla extract.
Combine the wet and dry ingredients until just mixed. Pour the batter into the prepared loaf pan.
Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
