Main Ingredients
- 1 cup Butternut Squash, cooked and mashed
- 1 cup Plain Yogurt
- 2 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- ½ cup Sugar
- 2 Eggs beaten
- ¼ cup Vegetable Oil
- 1 teaspoon Vanilla Extract
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, combine the mashed butternut squash and yogurt.
In another bowl, mix the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the sugar, beaten eggs, vegetable oil, and vanilla extract.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
