- 2 cups butternut squash puree
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 0.5 teaspoon salt
- 2 eggs
- 0.5 cup vegetable oil
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, and salt.
In another bowl, mix the butternut squash puree, eggs, vegetable oil, and vanilla extract.
Combine the wet and dry ingredients until just mixed. Do not overmix.
Pour the batter into the prepared loaf pan.
Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
