  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • ¼ cup melted butter
  • 1 cup corn kernels fresh or frozen
  • 6 slices bacon cooked and crumbled

Instructions 

  1. Preheat your oven to 425°F (220°C). Grease a skillet or baking dish.
  2. In a large mixing bowl, whisk together the buttermilk, egg, and melted butter.
  3. In another bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the corn kernels and crumbled bacon.
  6. Pour the batter into the prepared skillet or baking dish.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool slightly before serving. Enjoy!
