Ingredients

  • 1 cup sugar
  • ½ cup butter, softened
  • 2 eggs
  • 3 ripe bananas, mashed
  • ¼ cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, cream together the sugar and butter. Add the eggs and mix well.
  3. Stir in the mashed bananas, buttermilk, and vanilla extract.
  4. Combine the flour, baking soda, and salt; stir into the banana mixture until just combined.
  5. Pour batter into the prepared loaf pan.
  6. Bake in preheated oven for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  7. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
